It seems a nice rounding off to the Christmas posts to make my 400th post to this version of the blog with a Merry Christmas to you all. Thanks for making this journal worth coming back to with your comments and with your own blogs and journals as well! Looking forward to 2008 with anticipation of more great adventures.

Christmas Fudge = Russian Fudge... sorry Fi if you were expecting some new revelatory recipe... for our family, this is an annual event... all of us girls make it and give it away... Funnily we all have different preferences in terms of cooking time and final texture of the completed work... this is mine... the illustrated edition...

Here's the recipe... oooh I'm having a flashback... have I done this before??? This is another traditional Kiwi one straight out of the stock standard Edmonds Cookbook... (every other Kiwi you know probably has one...)

3 cups sugar
1/2 cup milk
1/2 cup sweetened condensed milk
125g butter
1/8 teaspoon salt
1 tablespoon golden syrup

  1. Put sugar and milk into a saucepan. (I'll point out at this stage that I made double recipe - this is clearly more than 3 cups of sugar!!)

  2. Heat gently (I usually start at the very middle setting on my stove and watch it, if it starts to bubble before it has fully dissolved turn the heat down) , stirring constantly until sugar dissolves. (I always find this is tricky, just how dissolved is dissolved??? I find if I'm patient I can get the melted sugar to be virtually crystal free... how long it takes depends on the heat... and my patience - it usually runs out when it's about 90-95% runny and that's usually 15min or so I think.)


  3. Add condensed milk, butter, salt and golden syrup. Stir until butter has melted. (I stir till the melted butter has mixed in with the rest...I hope you're not dieting, by the way...)





  4. Bring to the boil and continue boiling until the soft ball stage, stirring occasionally to prevent burning (you'll notice darker flecks of fudged which has cooked to the bottom come through the pot as you do this, it's no drama, but you do need to do this regularly as those brown flecks turn to burnt if you're not careful).





  5. Remove from heat. Cool slightly.

  6. Beat until thick.

  7. Pour into buttered tin.

  8. Mark into squares. Cut when cold.



The recipe doesn't tell you to eat it... I guess that goes without saying, but I can report that even if you have an uncontrollable sweet tooth this recipe is seriously restrictive in the amount you can eat at one sitting... it is rich beyond compare...

I've been holding off on putting up the tree. There are a few reasons for this, one is that the tree and it's adornments were tucked away in the backest of beyond in my wardrobe and getting them down involved hassle. The second was that it really is a bit redundant putting up the tree just for oneself... Still, in view of my sentimental attachment to me decorations this is a weak argument... go back to point one.

The final and most compelling reason I'd held out was the anticipation of feline interference in not only the decorating process but at an ongoing level.

It would appear as though my fears are by no means groundless. Remains to be seen what state it will all be in when he's home alone with it all...

Fi has posted her Christmas favourites this evening and as I was of a mind to do similar this week I'm following suit. I'm a big Christmas fan, not so much of going overboard with decorations and frills and furbelows but with all the things that make it a special time. The God stuff for sure, but the music, baby, the music is a big deal come Yuletide...

Counting down from number 5... Carol of the Bells. I heard this first on the Home Alone movie... dates me, for sure but there's a catchyness about the track and this version of it done by Celtic Woman is no exception. I love hearing how others have arranged fabulous tracks. I plan on doing it in our choir's Christmas repertoire eventually... we actually have to get the choir off the ground first...

Number 4... The Hallelujah Chorus from Handel's Messiah. This is a dodgily recorded version of the 'Soulful Messiah' which is a brilliant cover of the oratorio, given the gospel treatment... have I said I used to sing in a choir like this???

Was the time of my life...

3. Walking in a Winter Wonderland. What is it about a white Christmas that just seems more... Christmassy? I think it's our European heritage in the Antipodes that puts us crook... we really are young countries and our ancestors had white Christmases and we follow suit... this song says Christmas to me... I love too that this version is sung by one of my teen idols... Amy Grant.

Number 2 was a toss up. I could have put it in as number 1 but God always wins in these contests...

You can't grow up in New Zealand without singing a Christmas folk song called Te Harinui. It recounts the bringing of the gospel (all that Jesus stuff) to New Zealand, not on a snowy night... not with angels... but in the words of Samuel Marsden, the first missionary to NZ. Fi, he preached this sermon up your way... guess that's where Marsden Pt gets its name...

Anyway, couldn't find a video or even a halfway decent track so I did what every Garage Band owning singer does... I made one for you. Red, this is for you... you asked me donkey's ago to sing for you... and now I am... So, here it is, one night only. Deeleea Singular singing her homesick Christmas song... (PS... please forgive the tragic midi backing track... )

Number 1. Christmas is the God stuff for me. An outlandish tale of God stepping into the world all for the sake of ratbags like us. That's some big love, right there.

There isn't a song that captures it better for me than Silent Night. Josh Groban gives it his treatment here...

I am in possession of 20 rather lovely festive Moo Postcards fashioned from my very own Christmassy photos all of which I am set on dedicating to my fabulous bloggy friends. In fact, not only dedicating... but SENDING.

Of course, to do so means I need to have your addresses to which I may send them... so... if you are one of my regular readers and I'm NOT likely to see you at the office or in my neighbourhood this Christmas leave me a comment in my email and the first 20 18 will be the lucky recipients.

I bought my first Christmas gift the other day, one for Lil' Sis and her hubby. (Yeah, like I'm going to tell you what it is...)

This is a good plan in terms of budgeting. If I was really smart I'd be putting cash aside and doing the bulk of the shopping on Boxing Day, in the sales. Particularly as the family Christmas is not happening until I get to NZ in January... But when I see something I'll pick it up now just so that I don't miss out.

Truth is I'm pretty crap at present buying. I can buy for kids; for them I'm a big fan of educational toys, and my nephews love to read so that's always an easy mark - books.

I'm good for vouchers too, when you're rubbish at present buying vouchers are your saviour. I LOVE to get vouchers, it's like getting free money, but there seems to be a bit of stigma attached to them when you're buying for someone else, like they're a cop out because you can't think of what to buy, or worse, that you can't be bothered to make the effort. Fact is when you're rubbish at figuring out what to buy vouchers save your life.

This Christmas, I have a cunning plan for the kids, making my own gifts. But again, can't tell you much about that... Having figured it out though, I need to do some thinking about everybody else...

I guess what I'm getting at is that Christmas is coming and I'm planning ahead.

At least for now...

buzzy.gifOne presumes that if I were strictly traditional I could continue posting decoration pictures (though I'm sorry the stories have become less detailed as the series went on - time was of the essence) until Epiphany but I've elected to treat the decorations as a kind of advent calendar and finish this evening with this last one.

Those of you reading this on the wibsite will recognize the little bee as my avatar of choice for the last 18 months. Those reading it from NZ will recognize it as a Buzzy Bee an iconic toy all children of NZ are given (well, most anyway) at birth or soon after!! And those reading it elsewhere on the web may not recognize it at all! I bought this decoration when I was on holiday in New Zealand in April in order to bring it to a wibmeet as my 'identifying feature'. As I recall it seemed a little small in the end so I opted for something else... however, it will say wibsite to me everytime I hang it up now... and I think thats a V.Good thing.

Anyway, I've saved this one for last to give a shout out and Merry Christmas to all my wibsite mates and to say thanks for another wonderful year of stories, laughter and tears and for making my life so much the richer for having read, and even for some, met you! It never fails to amaze me that I have such a large circle of friends. It amazes other people whom I've mentioned you to as well. They think I'm a geek and weird but they just don't know how great it is to know a connection, wherein we all have a faith in common and wherein we all know so much of each others lives.

Anyway, you get the idea, I'm well thankful for you the wibbers for your company this year, to the wibsite for giving me a place to write and to process my world, and to God for this Christmas Season, without which we would not have that common thread of faith. You guys are flipping legends. In fact, as all my readers... Fi, Red, Jane, Jay, Anxious and all those who read quietly, so quietly I don't know you're there.

These three have all been gifts from various fabulous people in my life! This gorgeous dove was a gift from my brother and sisinlaw when they came to visit [OMG] was it 3 years ago? It was purchased at The Rocks, one of my favourite markets. They have very cool stuff there and one of the stalls was a whole lot of these tin decorations.

The kids came on holiday too, and it started off my girly dates with my niece. The first was a totally girly sleepover at aunty Dee's apartment. DVD, popcorn and chocolate, nail varnish and staying up late...

The second was going out, just the two of us, for coffee at a cafe.. The coolest part was picking her up from school and not being able to find her after the bell rang because she was busy telling her teacher all about her Auntie Dee and the girly coffee...

The third was a sleepover at her house, I slept in the bottom bunk and woke up to two little eyes peering over the top to see if I was awake yet... Too precious for words.

This one was a gift from Kirk and Jack her motherinlaw a year or two back. It's a handmade one and it weighs a ton!! All the weight of the pins and beads and sequins.

Kirk's my best mate. We met at performing arts college and hit it off straight way. Something about the same nationality... Her son is my godson and her husband is a good mate as well!! I think it's pretty funny that my best friend in Australia is a Kiwi... But I wouldn't trade her for quids.

Mum gave me this one, it hearks back to my teenage years when I was fairly massively into rainbows. I had a rainbow bag, rainbow earrings and a rainbow doona cover... among other things.

I still have the doona cover but the rest of the stuff was, well, pretty naff... and I'm pretty much over the rainbow thing ... because, I'm more of a grown up.

(At least most of the time...)
